An intense and deep ruby red wine with garnet reflections. To the nose, it shows a great richness of aroma, dominated by notes of ripe plum and wild black fruits. A well-integrated wine with spicy, balsamic hints and pleasant acidity. Wide and vigorous on the palate, supported by dense tannins, it evolves into a savoury and persistent finish. Go traditional Tuscan and pair with wild boar or stewed venison, or pair with a range of grilled and gamey meats.

The Cantalici brothers began their adventure in the mid-nineties.

Until then, they had worked in forestry with their father Loris, tending the woods that alternate with vineyards on the sweetly sloping Tuscan hills, until 1995 when Carlo and Daniele decided to specialize in wine growing techniques. Their service company was quick to become a reference point for wine-growers in the area. Today, it continues to grow, and cater to an ever-growing number of clients who request their skills in creating olive groves and vineyards, with services ranging from vine spacing and exposure to actual planting.

The growing consensus encouraged Carlo and Daniele to set up their own winery, putting their years of experience in the field to work for themselves. They saw it as a chance to create a product that would reflect all their love and talent for winemaking. These were the beginnings of the Cantalici Winery, a dynamic new company that planted its first vines in 1999 and is already a member of the Chianti Classico Consortium.


Organic wines need organic grapes, so farmers eschew the use of artificial pesticides, chemical fertilizers and herbicides. The US and EU, two of the most prominent bodies in the organic wine certification game, have different rules regarding ‘organic’, particularly concerning the cellaring practices (which relates to how wines are stored before getting into the bottle).

So wine can be made with organically-grown grapes but needs to use organic yeast and avoid sulfites to be a USDA-certified organic wine. Similarly, complex rules exist in the EU, but total sulfite levels are limited (rather than banned). In both cases, the entire winemaking facility – and not just the farm – has to use organic practices.

That might seem complicated, but it’s easier if you just stick to the golden rule: follow the organic certification rules in respective winemaking regions. If possible, try to learn about the winemaker to see how they comply with organic legislation (or organic methods) in their country. If you ever get the chance, a visit to an organic farm is a fantastic opportunity to understand the sustainable vision of organic farmers.
